Steps

Rub butter, flour and salt in bowl until breadcrumb consistency

Stir in sugar, currents, mixed spice and honey

Add egg and mix to form a firm dough

Roll out on a floured surface until 2cms thick

Cut in to 6cm discs and griddle over a medium heat until brown on both sides

Dust with caster sugar and eat immediately! (Can be stored for 10 days and served with jam and cream)
