As winter's have already stepped in and at it's peak now in most of the cities except some like Mumbai .It's time to give warmth to your body and rejuvenate yourself & keep yourself healthy.
This panjiri recipes is nutritious & full of health.If you are on diet or make it completely guilt free then just replace white sugar with jaggery or dates puree..you can even lessen the amount of ghee.

Panjiri is a seasonal staple from the Punjab region of the Indian treated as a nutritional supplement. It is made from whole-wheat flour( Instead I have used green moong dal & flaxseed to make it protein rich) fried in sugar and ghee, heavily laced with dried fruits and herbal gums. It is usually eaten in the winters to ward off cold. It's use is quite ritualistic and meaningful during & after pregnancy.

Ingredients

30-40 bowls
  1. -1/2 kgGreen moong dal (dry roasted)
  2. 1 kgFlaxseed(Alsi)-
  3. 1/2 kgDried dates-
  4. 1/2 kgAlmonds-
  5. 1/2 kgCashews-
  6. 1/2 kgRaisins
  7. 200 gmsGond-
  8. -4 nosDried grated coconut
  9. 200 gmsSugar powdered-
  10. -250 gmsDesi ghee

Steps

    Firstly prepare the things like wash & pat dry moong dal under sun thereafter dry roast it. Clean flaxseeds & dry roast it too.Now dry roast the grated dry coconut.After getting dry roasted all these grind them. Deseed the dry dates.Deep fry the gond in desi ghee and mash it.

    Now grind all the dry fruits except raisins.Here half of the recipe is prepared.Now is the time of mixing.For that take a broad deep wok drop in ghee let it warm.

    Now add the accessories one by one starting with ground moong dal.Fry in ghee till nice aroma comes followed by adding ground roasted flaxseeds ground coconut dry fruits raisins mashed deep fried gond and at the end add powered sugar.Mix all well.Relish this panjiri with milk or tea.

    You can even bind it into the shape of laddus pinnies for that you need to add some around 250 gms of dry roasted while wheat flour into the same panjiri mix mentioned above.
