Ingredients

  1. Meat
  2. 3boneless skinless chicken breast
  3. Grain
  4. 2 cupinstant rice/ any rice you prefer is fine as well
  5. Fruit
  6. 1 mediummango
  7. 2 boxsmall boxes of raisins
  8. 1/4 cupfinely shredded coconut flakes
  9. 1 canchuck or pieces of pineapple
  10. Veggies
  11. 1 smallred bell pepper
  12. 1 smallyellow bell pepper
  13. 1 smallorange bell pepper
  14. 1/2 cupsliced thin onion of your choice
  15. Seasonings
  16. 1/2 tspsalt
  17. 1/2 tsppepper
  18. 1 pinchchili powder
  19. 1/2 tspground ginger
  20. 1/2 tspground coriander
  21. 1/4 cupsoy sauce
  22. 1 pinchsesame seeds

Steps

  1. 1

    Cut chicken in small chunks

  2. 2

    Prepare rice as directed on packaging

  3. 3

    slice up all vegetables into thin strips and then into halves

  4. 4

    add all veggies and fruit into a pot. including the pineapple juice.

  5. 5

    turn burner to low/med heat and cover pot w a lid

  6. 6

    add chicken and seasonings (except sesame seeds) to a non-stick skillet and cook on low/med heat until chicken is fully cooked. stir occasionally.

  7. 7

    once veggies and fruit are sauteed to your preference and liquid is gone, remove from heat, add chicken and rice to pot.

  8. 8

    mix well. add to serving dish and sprinkle sesame seeds over top
