1/4 cupolive oil
1 largeonion, chopped
3 cupfresh spinach
28 ozdiced canned tomatoes
2 tspsalt
1 tspground fennel seed
1 cupblack eyed peas frozen and thawed

preheat oven to 350

heat oil in a large saucepan over medium high heat.

saute onion with spinach, tomatoes, salt and fennel for 15 minutes.

combine beans with spinach mixture in a 2 quart casserole dish

bake for 15 minutes
