Cauliflower pickle salad (Snow Wells)

Ingredients

  1. 1 largeSelection of fresh veges (cauli, broc,beans, peppers, onion carrots,etc)
  2. 1 1/4 cupWhite vinegar
  3. 1/2 cupWater
  4. 1/2 tspTurmeric
  5. 1 1/2 tspSalt
  6. 1 tspCelery seed
  7. 1 1/2 tspMustard seed
  8. 3/4 cupSugar

Cooking Instructions

    Chop up enough fresh veges to full a large glass jar.

  2. 2

    Blanch veges briefly than drain and refresh in cold water before draining again. Add to large, lidded glass jar or bowl.

  3. 3

    Add rest of ingredients to a pot and bring to boil, stirring frequently. Remove from heat, cool and pour over veges.

    Cover and refrigerate for at least four hours. Should keep for at least a week (if it lasts that long!)
