Saute Guidry's till soft, add garlic, then add meat, break clumps, add spices and cook until browned. Cool then transfer to zip lock bag and refrigerate over night, Put cold meat in food processor and pulse until minced fine. Roll out dough, cut into 2"rounds, or larger, fill each round with meat, fold over and pinch the ends.Lay pies in greased baking sheet, slit with knife for ventilation, whisk egg and water together and brush over pies.Bake 400° 15 to 17min, until golden brown, cool on wire racks.
