  1. 1 lbtop round (fajita cut)
  2. 6 ozsofrito
  3. 1 canhunts roasted tomatoes
  4. 1 canCoconut milk
  5. 1olive oil
  6. 6 eachsmoked sun dried tomatoes
  7. 2 clovegarlic
  8. 1 mediumsazon completa
  9. 1 mediumgalic powder
  10. 1 smalloregano
  11. 1 smallchipotle
  12. 1 smallcilantro
  13. 1 dashcummin
  14. 1 dashpaprika
  15. 1butter optional
  16. 1 cancorn kernal
  17. 4 ozboars head diced pancetta
  18. 1baby bella mushrooms
  19. 1sweet onion
  20. 1potato

Steps

  1. 1

    cut meat in half. season with salt, Sazon completa and garlic powder

  2. 2

    chop onion

  3. 3

    on med high 8 fry pancetta till almost burnt then drain some oil

  4. 4

    Add onions and garlic till almost transluient

  5. 5

    Add meat and mushrooms

  6. 6

    Just before juices get absorbed add sofrito tomatoes and half a can of coconut milk

  7. 7

    Add sun dried tomatoes, cilantro, oregano, Chipotle powder, cummin and paprika

  8. 8

    Bring down to number 2 and cover

  9. 9

    Steer occasionally

  10. 10

    After 1 hour add rest of coconut milk

  11. 11

    Add potatoes

  12. 12

    Cook on low for 1 more hour until meat softens
