Ingredients

4 servings
  1. 1red bell pepper
  2. 4 cuparugula, loosely packed
  3. 1/2 cupthinly vertically sliced red onion
  4. 2 tbspchopped fresh chives
  5. 2 tbspchopped fresh basil
  6. 1 tbspchopped fresh flat leaf parsley
  7. 1 can15 oz can cannellini beans or other white beans, rinsed and drained
  8. 1/2 tspgrated lemon rind
  9. 2 tbspfresh lemon juice
  10. 1 clovegarlic, minced
  11. 3 tbspEVOO
  12. 1/4 tspsalt, divided
  13. 1/4 tspblack pepper, divided
  14. 1Cooking Spray
  15. 1 lbpeeled and deveined large shrimp
  16. 2 tbsppine nuts, toasted

Steps

    Preheat broiler to high.

  2. 2

    Halve bell pepper lengthwise; discard seds and membrane. Place halves, skin side up, on a baking sheet. Broil 12 minutes or until blackened. Seal in a paper bag. Let stand 5 minutes. Peel; chop. Combine bell pepper and next 6 ingredients (through beans). Combine rind, juice, garlic, oil, 1/8 tsp salt and 1/8 tsp pepper.

    Heat a large skillet over medium high heat. Coat pan with cooking spray. Sprinkle shrimp with remaining salt and pepper. Cook 2 minutes on each side until done. Add shrimp, lemon mixture and nuts to arugula mixture; toss.
