  1. for egg plant
  2. 3 tspcoriender powder
  3. 1 tspcumin powder
  4. 1 tspchilly powder
  5. 4 tspraw mango powder
  6. 1/2 tspdried fenugreek powder
  7. 1eggplant
  8. tomato dip
  9. 6tomato
  10. 1onion
  11. 2 tspfennel
  12. 2 tbspsugar
  13. 1 tspblack sesame
  14. 3 tspvinegar
  15. yohgurt dip
  16. 2 cuphung yohgurt
  17. 1 tbspgarlic paste
  18. 1/2 bunchcoriender leaves
  19. 1mint leaves

Cooking Instructions

  1. 1

    cut eggplant (brinjal) in 1cm thick slices

  2. 2

    Mix oil and powdered spices.and rub into brinjal and keep aside for 20 minutes

  3. 3

    mix chopped tomatoes, onions, sugar, vinegar, fennel seeds, black sesame and cook on.slow flame

  4. 4

    whisk hung yoghurt, add garlic paste chopped coriander n mint leaves, and refrigerate

  5. 5

    grill (or fry) the brinjal slices
