Ingredients

Serves 6 servings
  1. 7 ozmild chorizo (about 200 grams)
  2. 1 1/3 cupsshredded Swiss cheese (about 160 grams)
  3. Salt, pepper
  4. 2whole eggs
  5. 2egg yolks
  6. 1/4 cupunsalted butter (about 60 grams)
  7. 3/4 cupall-purpose flour (about 100 grams)
  8. 2 cupsmilk (about 500 ml)

Steps

  1. 1

    Cut the chorizo into very small pieces.

    Melt the butter with the milk in a saucepan.

  3. 3

    In a bowl, whisk together the whole eggs, egg yolks, and flour.

  4. 4

    Add the milk and butter mixture, then stir in the chorizo and Swiss cheese.

    Season with salt and pepper.

  6. 6

    Fill silicone canelé molds with the mixture.

  7. 7

    Bake at 400°F (200°C) for 22 minutes for mini canelés or 35 minutes for large canelés.
