Cooking Instructions

Line an 18cm square tin with the padtry abd spread the bottom with the jam.

Cream margerine and sugar.

Add ground almonds and egg and mix well.
- 4
Spread mixture over jam and sprinkle with chopped almonds.
- 5
Bake in a moderate oven 190ºC for 20-25 minutes.

Allow to cool, then cut into fingers.

This is adapted from a recipe originally found at shelovesbiscotti.com, but without the granulated sugar (all brown sugar only) or lemon zest, whose point I could never get.
