Preheat oven to 200° C.

Boil some water and dissolve your stock cubes in 500ml.

Place your chopped potato, carrot, onion, spring onion, lemongrass and garlic into a saucepan.

Add olive oil, salt and pepper and soften.

Add your cheese, stock, fish and herbs into the saucepan and bring to the boil. Add flour to thicken your sauce if needed.

Pour your filling into the pie and cover it with the pastry.

Bake your pie for 45 minutes to 1 hour or until golden brown.
