heat skillet, medium high

cut circle into bread leaving an edge to butter

butter one side of bread

in a bowl crack eggs, add spinach and beat well

once skillet heats place one slice bread butter side down

pour in egg/spinach mixture into cut out circle until egg fills circle

flip once spatula can cleanly lift birds nest, let cook through

plate birds nest and top with cheese

repeat steps 5-8 for second slice of bread
