  • 1/4 cuplime juice
  • 1/2 cupolive oil
  • 3 clovegarlic
  • 1 tspsalt
  • 1 tspfresly ground black pepper
  • 2mango. peeled pitted and diced
  • 1red bell pepper, halved, seeded and finely diced
  • 1green bell pepper, halved, seeded and finely diced
  • 1yellow bell pepper, halved, seeded and finely diced
  • 1 largered onion, halved and finely chopped
  • 1/2fresh cilantro finely chopped
  • 15 ozblack bean drained and raised

    whisk the olive oil, garlic, lime juice, salt and pepper together in a large bowl.

  2. 2

    add the mangos, peppers, red onions, cilantro and toss to coat

    add the beans and gently toss everything together
