
Bitter Gourd in Sweet Shrimp Souce

Preparattion. Mince onion and garlic. Clean shrimps, peel the shell.

Cut bitter gourd in half and throw away the center (the seed). Clean it thoroughly to minimize bitter taste. Then slice thin the remaining green flesh.

Pour salt into sliced gourd and squeeze gently to force the bitter sap out. Then rinse with fresh water. Repeat 2 or 3 times as necesarry. Don't let the flesh crumble in the process.

Heat cooking oil then stir fry garlic and onion in sequence.

Add shrimp in to the wok and add oyster sauce, sugar and pepper powder. Fry until shrimps are yellowish (half done)
