  1. 1 canBlack beans
  2. 1/2 cupCorn kernels (fresh or frozen, defrosted)
  3. 1/2 cupShredded cheese (Mexican or similar)
  4. 1Egg
  5. 1/4 cupPancake mix
  6. 2 tbspCanola or vegetable oil (for sautéing)

Steps

  1. 1

    Put all ingredients (aside from oil) in food processor and whirl until smooth-ish

  2. 2

    Heat pan over med-high and swirl oil

  3. 3

    Spoon small-pancake sized dollops onto heated pan. Allow to brown, flip and cook opposite side

  4. 4

    Serve as is or w/ketchup or sour cream
