Using a pair of scissors cut the bacon into small pieces, then fry until cooked in a frying pan. Remove from the heat.

Lightly oil a large frying pan then cover with a layer of potatoes leaving no gaps, then top with a little seasoning. Add a layer of onion on top, cover with cheese and sprinkle over some bacon. Repeat the layers again.

Fry on a low light for 30 mins. Using a spatula loosen the base every 10 mins to prevent it from sticking, then place the pan under a grill to brown the cheese. Slice into 4 wedges and serve.
