preheat oven to 500

sift together 2 cups flour and yeast

add water and salt and mix well

gradually add flour until dough cleans itself off the bowl

knead for about 4 to 5 minutes adding any desired herbs or spices

form dough into 10 balls and roll to quarter inch thick
- 7
flowering each side, place on baking sheet and allow to rise for 30 min
- 8
flip pitas just before baking on bottom rack for 5 min
- 9
when warm enough to handle place pitas in alright container
- 10
ready to serve
