Ingredients

  • dry ingredients
  • 3 cupsifted Ceresota or Heckers unbleached flour
  • 1 cupsugar
  • 1/2 tspsalt
  • 2 tspbaking powder
  • 1 cupunsalted butter
  • 3 eacheggs, well beaten
  • 1 2/3 cupevaporated milk
  • 1 1/2 tbspcaraway seeds
  • 1/4 cupgrated orange rind
  • 1 tbspsugar

Steps

  1. 1

    Sift dry ingredients together into a large bowl.

  2. 2

    Cut in butter until mixture resembles coarse meal.

  3. 3

    Mix orange rind with tablespoon of sugar.

  4. 4

    Add eggs, evaporated milk, caraway seeds, and orange rind/sugar mixture.

  5. 5

    Beat only until well blended.

  6. 6

    Turn into well greased 10" tube or Bundy pan.

  7. 7

    Bake in preheated 350°F oven for one hour or until tests done.

  8. 8

    Cool on wire rack for 10 minutes.

  9. 9

    Remove from pan before slicing.

  10. 10

    May be sprinkled with confectioners sugar or glazed with a mixture of confectioners sugar and orange juice.
