  1. 1 canrinsed black beans
  2. 2 lbextra lean ground beef
  3. 2chopped onion
  4. 3 cupsalsa
  5. 2 tbsptaco seasoning
  6. 2 cupfrozen corn
  7. 6large flour tortillas
  8. 1 1/2 cupshredded cheddar
  9. 1 1/2 cupshredded mozarella

    Heat oven to 400°F.

  2. 2

    Brown beef with onions in a large nonstick skillet. Add salsa, taco seasoning, corn and beans. Mix well. Cover; simmer 5 minutes. Remove from heat.

  3. 3

    Spray the bottom of the baking tray with cooking spray.

  4. 4

    Cover the bottom of the baking tray with tortillas.

  5. 5

    Cover with 1/3 of the meat mixture and 1/2 cup each type of cheese.

  6. 6

    Add another layer of tortillas and meat and cheese. Repeat.

  7. 7

    Cover with foil.

  8. 8

    Bake for 30 minutes.

  9. 9

    Uncover and bake 5 more minutes.

  10. 10

    Optional : serve with shredded lettuce, thinly sliced radishes and sour cream.
