Ingredients

  1. Ingredients for Pineapple fried rice :
  2. 4 cupsBoiled rice (any type)
  3. 4 tbspOil
  4. 4rings / 1 cupTined Pineapple chopped
  5. 2Capsicum medium size (washed & thinly sliced)
  6. 1big Onion (peeled, washed & chopped)
  7. 1 tbspGarlic minced
  8. 3 tbspBlack raisins (optional)
  9. 1/4 tbspCashewnuts chopped
  10. 1 tbspSoya sauce
  11. to tasteSalt
  12. to tasteRed chilli powder
  13. to tasteBlack pepper
  14. 2 tbspLemon juice
  15. 1/4 cupWater
  16. 3-4Green chilli
  17. 4 tbspCoriander leaves
  18. Ingredients for Mixed vegetable raita :
  19. 1Carrot large (peeled, washed & grated)
  20. 1Cucumber medium size (peeled, washed, grated & squeez out the juice)
  21. 3Snake cucumber (tarr) (washed & chopped)
  22. 1Tomato medium size (washed and chopped)
  23. 1Onion chopped
  24. to tasteSalt
  25. to tasteBlack pepper powder
  26. 5 cupsUnsour Curd

Steps

    For Pineapple fried rice :

    Heat oil in a wok/kadai. Add chopped pineapple. Cook it on high for 3-4 min. Keep on stirring after intervals.

    Add capsicum, mix it and cook it on high for 3-4 min. Now add garlic, green chilli and onion. Mix well. Cook on high till light brown. Now add raisins and cashewnuts. Mix well. Cook on high for 3-4 min. Add salt, red chilli powder and black pepper powder. Mix well on slow flame. Add soya sauce. Mix well.

    Add water and again mix well on slow flame. Add boiled rice. Mix very well so that the rice gets well coated with pineapple mixture.

    Add lemon juice, mix well. Add coriander leaves and mix well. Transfer to a serving plate. Serve hot with raita.

    Method for Raita :

    Take a bowl. Add curd and whisk properly, so that no lumps should remain. It should be smooth. Now add in all the given ingredients and mix well.

    Transfer it to a serving bowl. Cover it and keep it in fridge for 1/2 hr. Serve with rice, pulav, biryani or the way you like it.
