Ingredients

8 servings
  1. 2 cansliced potatoes
  2. 2jalepenos( fresh diced)
  3. 1cajun seasoning to taste
  4. 6eggs
  5. 3 canHerdez Salsa Verde
  6. 2 mediumyellow onions, diced
  7. 1corn tortillas ( or flour if you prefer)
  8. 2 lbground turkey (or beef if you prefer)

  1. 1

    In a large skillet, saute onions and jalepenos.

  2. 2

    add seasoning, brown meat and drain

  3. 3

    push all ingredients to one side of the pot and scramble eggs outside the other ingredients. Once they are scrambled, mix them in with the meat.

  4. 4

    Drain potatoes, stir them in.

  5. 5

    Dump. in the cans of salsa

  6. 6

    Bring to a boil. Cover and reduce heat. Simmer for 30 minutes.

  7. 7

    Serve as filling for tacos, or slice thetortillas into small squares and mix them in to make a sort of casserole.
