***Instead of Ener-g egg substitute, you can use any other desired substitute, such as cornstarch, or baker's yeast, or potato starch. Also, I used Stevia sweetener for this recipe, please adjust accordingly to other sweeteners.

Preheat oven to 350°F. Add oil, sugar and sugar substitute in a blender and mix well. In a separate bowl stir together the flour, salt, baking soda and powder.

Add the egg substitute, applesauce, vanilla, and cocoa to the blender. Lastly, add the dry flour mixture to the blended mixture. Blend just until all ingredients are incorporated.

Pour mixture into a greased 8x8 pan and bake for 20-25 minutes. Allow to fully cool before serving.
