Ingredients

2 servings
  1. piece2 or 3 bacon/ turkey bacon
  2. bunchfresh berries
  3. 2 mediumred potatoes
  4. 1 mediumsquash seasonal
  5. 1handful of any mushrooms
  6. 1 1/3 mediumonion, chopped
  7. 1 pinchchili flakes
  8. 2eggs
  9. 1salt and pepper to taste
  10. 1 cupboiling water
  11. 1/3 cupquick grits
  12. 2 pieceof laughing cow cheese
  13. 1 tbsptomatillo sauce/ green chopped chilies
  14. 1 tspminced garlic/ or 2 fresh cloves
  15. pinchground cumin
  16. pinchcoriander
  17. 2slices of butter pats

    Cook up your bacon and get your water boiling add a pinch of salt

  2. 2

    Using fresh new potatoes will need to be cooked off before hand. Using cooked ones are better .put into the frying pan after bacon add mushrooms, onions,squash,and chili flakes. Cumin and coriander ans a pinch of salt course sea salt works well.

  3. 3

    Get your plate together put on the berries and bacon then add the grits to boiling water with the cheese stir up till thickens. Cover and take off the heat.

    Put the potatoes mixture onto the plate the break the eggs into the pan add the other slice of butter stir up quick omelet style then flip the eggs after 1 min turn off th he heat so they don't over cook.

    Plate and eat! With some fresh coffee, or a nice belini, or even a mimosa!

I always loved cooking for my family and friends and I got my cooking chops at the Hilton hotel in Odessa,TX about 23 yrs ago when I volunteered to help out in the kitchen after our staff walked out on a strike! In one week I was offered a position to be his apprentice and recited my Certificate in 11 months! I went on to do catering for the next 18 yrs!
