Preheat oven to 450°F.

Cut and rinse cauliflower. I find it easiest to cut the cauliflower head in half, and then cut cauliflower into smaller pieces from there.

Put cauliflower into a food processor. Pulse until cauliflower is fine, similar to the texture of uncooked quinoa

Grease or oil a large baking pan and pour cauliflower in. Add olive oil, Italian seasoning, salt and pepper. Stir and spread evenly.

Bake for 5-7 minutes, stir, and bake for another 5-7 minutes.
