Start with a warm pan

Slice up garlic and add to pan

Add 1.5 cup vegetable stock and cook quinoa

Add quinoa to bowl

Add sliced up shallot, avocado, red pepper, cucumber to quinoa

Add toasted pine nuts, olive oil, salt, parsley to quinoa and veggies

Roll lemon and squeeze juice into quinoa

Stir up salad

Optional: serve on bed of greens & or grilled tofu
