I made this recipe in remembrance of my fallen sister Neysia Manor from a Facebook support group for victims of narcissistic abuse. Neysia passed away in her sleep on March 2 2015 leaving her precious 9 year old daughter Ruthie. I made this recipe with Ruthie in mind. This is what I would make for her if we lived closer. Some day I hope you stumble upon this recipe Ru! Know that your mother was a true inspiration for many of us in the group Grace of the rise. She will be missed. Yet always remembered

4chicken breasts
1 boxEggo mini waffles
1 cansliced peaches
2 tbspbutter
1ground cinnamon
1/4 tsprum extract
1/4 tspvanilla extract
2 tbspsugar
cayenne pepper
johnnys seasoning salt
lemon pepper
garlic powder
1 cupcooking oil
2 cupall-purpose flour

Slice chicken breast into thin strips

Heat up oil under high heat lower heat to medium high once grease heats up

Add chicken to hot oil and fry until golden brown

Open canned peaches and put in a sauce pan under medium high heat add butter, sugar, rum extract and vanilla. Simmer for a few minutes.

Preheat oven 400°F. Place waffles on cookie sheet and bake for about 5-10 minutes

Once waffles are ready remove from oven and top with chicken, peaches and syrup from peaches. Enjoy
