Leaving the skin ON, cut the top off the garlic head. Brush the top with olive oil, and wrap the head in aluminum foil. Place directly on the rack and roast in oven for 35 minutes.

While your garlic cools, pulse in (hand)blender/food processor all breadcrumb ingredients to desired texture. For more crunch, pulse less time.

Unwrap the garlic head. Placing garlic head cut side down on your cutting board and using a chef knife, press the head until all the garlic is out. Mash into a even paste.

In a medium bowl, combine whipped cream cheese, sour cream, and garlic paste. Season liberally with Beer Can Chicken Seasoning and parsley flakes.

Place chicken in a 13x9 pan. Cover with cream cheese mixture. Top with breadcrumbs. Spray breadcrumbs with non-fat cooking spray.

Bake (still 350°) for 45 min-hr, out until chicken reaches 165°F, or 71°C.
