Brown ground beef. Add vegetables of choice if you'd like, such as corn, onion, garlic, or beans, or whatever.

Using a 10x10 pan, pour enchilada sauce until it's covered the bottom of the pan.

Arrange 3 tortillas over the sauce. **I cut my tortillas into 4's and spread it out that way. Fry your tortillas if you want crunchy enchiladas.

Pour the ground beef over the tortillas. Spreading it out evenly.

Spread cheese over the meat. A good amount to make it nice and gooey.

Add your remaining 3 tortillas.

Pour some more sauce over the second layer of tortillas.

Add some more cheese over second layer of sauce.

Bake your enchiladas at 400°F until you see the cheese getting golden browned around the edges of the pan. **You can add green onions as a topping, black olives or whatever you want.

Let them cool about 10 mins before serving to let everything thicken. Serve with rice and beans or eat it alone.
