Ingredients

  1. 4 cupsflour
  2. 4 tablespoonsbaking powder
  3. Pinchsalt
  4. 1 1/2 cupssugar
  5. 200 gsoftened margarine
  6. 4extra large eggs
  7. 2 teaspoonsvanilla essence
  8. 1 cupsoftened jam (strawberry or apricot)

Steps

  1. 1

    Turn oven on to 180°C
    Grease a baking tray and dust with flour, set aside.

  2. 2

    In a large bowl, place flour, baking powder, salt, sugar and margarine. Rub together until it resembles crumbs.

  3. 3

    Beat eggs and vanilla essence and pour into the flour mixture. Mix together and knead for about five minutes to a soft dough.

  4. 4

    On a floured surface, roll out half of the dough and shape it to the size of the baking tray.
    Place the rolled dough on a greased baking tray.
    Spread half cup of the jam all over the dough.

  5. 5

    Roll out the second half of the dough and shape it to the size of the baking tray and lay it on top of the jam in a baking tray.

    Bake for 25-30 minutes until golden brown.
