Ingredients

  1. 250 gramsblack glutinous rice flour
  2. 200 gramssuperfine sugar or regular sugar
  3. 15 gramsOvalett or TBM (emulsifier)
  4. pinchsalt
  5. pinchbaking powder
  6. 6eggs
  7. 150 gramsmelted butter

  1. 1

    Mix these all with high speed mixer for about 10 minutes until it reaches 3 times volume and have a good consistency

  2. 2

    Insert the flour and use spatula to mix it well, but do not overmix

  3. 3

    Insert melted butter and mix with spatula again, but do not overmix

  4. 4

    Prepare a baking pan (25x25cm) and grease it with butter, also prepare a preheated large metal vessel for steaming

  5. 5

    Put your baking pan into the vessel and steam for 45 minutes

  6. 6

    If you want a crunchy texture, you can bake it with oven for about 10 minutes, 150 celcius or 300 fahrenheit

  7. 7
