preheat oven to 350°F

grease and flour 10-cup bunt pan
- 3
melt semi sweet chocolate. set aside to cool.

beat the sugar and eggs until light and fluffy

gradually add oil, pureed beets, cooled chocolate and vanilla

combine 2 tablespoons of the flour with chocolate chips. set aside

whisk together the remaining flour with baking soda, salt and cocoa powder. ass the dry ingredients to the batter.

stir in the chocolate chips using a wooden spoon
- 9
scrape the batter into the prepared pab. bake for 50 minutes to an hour. (only bake 35-45 minutes if in sheet pan)

let cake cool in pan for 15 minutes before unmolding onto a rack to finish cooling

spoon icing into plastic bag and microwave in 5 second intervals until this. cut corner of bag and drizzle over cake. add sprinkles if desired.
