It is perfect for my Valentines meringue tarts as I have an egg white left over from making the pastry. Nothing gets wasted.

Ingredients

  1. 1small egg white
  2. 100 gramscaster sugar
  3. 1 tspwhite vinegar ( I used cider vinegar)
  4. 2 tbspboiling water

Cooking Instructions

    Sprinkle sugar over the egg white in a large bowl

    Add the vinegar and the boiling water

  3. 3

    Whisk until egg white stiff and fluffy. This takes a bit of 'elbow grease' but you can use and electric whisk.

    You can choose to bake the meringue as big dollops in the oven or use in a recipe. If you baking spoonfuls of meringue I use a low temperature about 100C for a about 1hour
