  1. 125 mlseville orange juice
  2. 2 tbspseville orange zest
  3. 3eggs
  4. 125 gramsunsalted butter
  5. 200 gramscaster sugar

  1. 1

    set heatproof bowl over a pan with simmering water. combine eggs, orange juice, zest and sugar in it.

  2. 2

    whisk until hot and add the butter. whisk until dissolved. continue stirring until it thickens.

  3. 3

    pour curd into sterilised glass jars and seal. leave to cool
