  1. 150 gramsCod Fillet x 4
  2. 40Basil Leaves
  3. 3 cloveGarlic
  4. 25 gramsPine nuts
  5. 50 gramsBreadcrumbs
  6. 50 gramsParmesan
  7. 45 mlExtra-virgin Olive Oil
  8. 40 gramsButter
  9. 1Grated zest and juice of one Lemon

  1. 1

    Preheat oven to 200°c (180°c fan oven).

  2. 2

    Place basil leaves, garlic, pine nuts and parmesan in a pestle and mortar or blender and blend. Add olive oil until all combined and season to taste.

  3. 3

    Melt butter in a pan, then remove from heat and add breadcrumbs, lemon juice and zest. Allow to cool then mix with pesto.

  4. 4

    Pat firmly on top of cod fillets and bake in oven for 15 mins.
