Superb recipe that is quick and easy to make. Can be prepared in advance and put in fridge.
Steps

Preheat oven to 200°c (180°c fan oven).

Place basil leaves, garlic, pine nuts and parmesan in a pestle and mortar or blender and blend. Add olive oil until all combined and season to taste.

Melt butter in a pan, then remove from heat and add breadcrumbs, lemon juice and zest. Allow to cool then mix with pesto.

Pat firmly on top of cod fillets and bake in oven for 15 mins.
