Ingredients

  1. 3 tbspOlive Oil
  2. 1Yellow Onion, Sliced
  3. 1 cloveGarlic, diced
  4. 2 cupVegetable Broth
  5. 1 tspCumin (more to taste)
  6. 6Plum Tomatoes diced
  7. 2Jalapeño Peppers with Seeds sliced
  8. 1Yellow Pepper sliced
  9. 1Red Pepper sliced
  10. 5Chipotle Peppers (canned) sliced
  11. 8 ozPack of White Mushrooms
  12. 1 tspChili Powder
  13. 12 ozCan Tomato Paste
  14. 10 ozPackage of Vegetable Crumbles
  15. 45 ozKidney, Black, or Pinto Beans (or 15 ounce can of each)
  16. to tasteSalt
  17. to tasteBlack Pepper

Cooking Instructions

  1. 1

    In a large pan heat olive oil over medium-high heat.

  2. 2

    Cook onion, garlic, and cumin in olive oil until lightly browned.

  3. 3

    Add vegetable broth, plum tomatoes, all peppers, mushrooms, chili powder, and tomato paste. Mix thoroughly, then cover and let simmer for 45 minutes.

    Add vegetable crumbles to mixture and let simmer for 20 minutes.

  5. 5

    Add all the beans and let the whole thing cook over very low heat for at least 60 minutes.

  6. 6

    Add salt, pepper, and extra cumin to taste.
