I made two pans of this to bring to a small Christmas party. Everyone loved it and it was gone within the first 15 minutes. People keep asking me to make it now; they even offer to buy all of the ingredients.

I made two pans of this to bring to a small Christmas party. Everyone loved it and it was gone within the first 15 minutes. People keep asking me to make it now; they even offer to buy all of the ingredients.
Cooking Instructions

Preheat oven to 375F.

Boil cubed potatoes in salted water until tender.
- 3
Cook bacon until crispy, crumble and set aside.
- 4
Add the crumbled bacon, sour cream and grated cheese to already prepared ranch.

Drain the cubed potatoes and put in greased baking dish.
- 6
Pour the ranch dressing mix over the potatoes.
- 7
Bake for about 30 minutes or until golden brown.

This is a variation on"Hashed Potatoes With Potatoes Only". It's a spicy version of hashed potatoes that goes well with beer.It's best to shred the potato with a slicer or mandoline, since more starch will come out of it and it will stick together better. Don't remove any moisture that comes out of the potatoes.If you don't like very spicy food, halve the amount of curry powder.You can make this in a frying pan too rather than on a griddle.
