Cooking Instructions

Hard boil some eggs. I used 3 to make 6 total Enfield style eggs. But you can always just double up if you need to feed an army or so

Cut the eggs in half to make 6 halves and go a head and put each of the yolks into a mixing bowl.

Once the yolks are in a mixing bowl you are going to want to toss in your mayonnaise and your guacamole. I normally just eyeball the ammount but I measured this time [I used lone _ wolf _ kitchen's recipe for the mayo and guacamole]

Now you are going to add your garlic powder, onion powder, and chili powder. And stir it all up!

I like to stir mine with a fork and keep some egg yolk chunks in there, but stir it all up to the consistency you like!

When you are all done stirring, use a spoon to fill each half egg with your mixture till all of it is gone. You will have plenty to fill each egg. Once each egg half is filled, sprinkle the top with some chili powder and you are ready to serve!

I have head of these fabled delicacies but never attempted to make one until recently. It’s pretty straight forward. Soft boiled eggs, wrapped with sausage, breaded and fried. I used “Hot” 🙄 Italian sausage, because that’s what I had on hand. But, I personally think it would go better with the sweet Italian sausage with provolone and fennel in it. Karl -

With Halloween right around the corner, I've made mine for sharing today using my bat and ghost cookie cutters.This is one of those recipes that I don't include any specific quantities for the ingredients.
