Garri cookies

I wanted to try out something different and remembered how we were taught garri Biscuits in secondary school then decided to recreate the recipe. I wondered how baking with garri would turn out hence this recipe. My garri cookies has this bit of tangy taste because of the use of garri but it's absolutely yummy😘👌

I wanted to try out something different and remembered how we were taught garri Biscuits in secondary school then decided to recreate the recipe. Preheat your oven at 200°

Sprinkle 120ml of water over finely sieved garri in a bowl & mix thoroughly. Break up any lumps with your hands

Measure flour into a bowl, add butter into flour and mix briskly
- 4
Add baking powder, sugar, salt and garri to the flour mixture.

Make a well in the Centre of the flour mixture then pour egg and milk into it. Stir wet ingredients with a fork to combine, then slowly mix in the dry ingredients

Drop in the batter by large spoonfuls bit by bit, onto a greased baking tray

Bake for 20 minutes (or until they begin to turn brown) remember to poke each cookie with a fork after the first 17 minutes of baking, then place back in the oven to finish baking

Remove from oven & allow to cool

Serve with drink of choice
