I needed to put my over-ripe plantain to use and decided to try making some Nigerian puff-puff with it. It came out really lovely👌

I needed to put my over-ripe plantain to use and decided to try making some Nigerian puff-puff with it. It came out really lovely👌
Steps

Place plantain in a clean bowl and mash thoroughly with a fork

Beat eggs separately and add to the plantain, then mix
- 3
In a separate bowl, mix flour, baking powder, sugar, salt, margarine and mix thoroughly
- 4
Mix the dry ingredients together with the plantain and eggs thoroughly
- 5
Heat up vegetable oil for frying and deep fry in small chunks (this is to allow the puffs cook thoroughly) till brown

Remove from the oil and allow cool
- 7
Serve warm
