sift flour, sugar cinnamon, baking powder and salt together

separate eggs, whites in a medium bowl and yolks in a large bowl

beat egg whites until soft peaks form

beat the egg yolks, stir in milk and oil

add the dry ingredients and apple to the egg yolk and mix well
- 6
fold egg whites into batter mixture very gently until only just combined. it is better to fold in a large table spoon first to break up the batter mixture before adding the rest of the egg whites

let the batter rest while the waffle iron heats. brush with butter on both plates. the butter should sizzle as soon as it hits the plates. be sure to use s brush suitable for the heat, e.g.a silicon brush

if necessary, add up to another 1/4 cup of milk, it should be thick but able to drop off the spoon

quickly add the required amount of batter- you will need trial and error with several large spoons and ladles to find which best suits your waffle make

close the waffle machine. after about a minute, release the catch so that the top plate can rise as high as needed
- 11
the waffles cook in between 3 and 5 minutes, wait until the steam stops and then gently raise the top plates.too you may need to ease the wake from the top plate using a non stick suitable spatula. If you open it too fast, you could rip the waffle in half
