Stuffed Zucchini with Ground Beef and Rice

Steps
- 1
Boil the zucchini for a few minutes, remove them from the water, and scoop out the seeds from the inside (to make space for the ground beef filling). Let them drain.
- 2
Cook the ground beef with chopped onions and season with salt, white pepper, sweet paprika, and sugar. Add the tomato puree and canned mixed vegetables, then simmer until everything is cooked through.
- 3
Bring water to a boil and cook the rice. Once the rice is cooked, stir in pieces of cream cheese.
- 4
Start filling the zucchini with the ground beef mixture. Place slices of cream cheese on top of each zucchini, arrange them in a baking dish, and surround them with the remaining ground beef mixture and plain rice. Bake until the cheese melts.
- 5
Serve and enjoy!
