Ingredients

  • 2 1/2 lbbutternut squash, peeled and seeded (4 cups chopped)
  • 1 piecelemon or lime zested
  • 3 sliceginger or 1 teaspoon of powdered ginger
  • 1/2Large onion sliced
  • 1 clovegarlic clove, crushed
  • 2 pieceJalapeno chiles or cayenne pepper to taste.
  • 1 piecelemon juiced or 2 limes juiced
  • 2 cupcoconut milk
  • 1 tbspolive oil
  • 1 tspcurry powder

Steps

  1. 1

    Cook chopped squash, onion, garlic for 10 minutes stirring occasionally.

  2. 2

    Add coconut milk, cook for 30 minutes on stove

  3. 3

    Puree and add lime juice.

  4. 4

    Serve with herbs.
