Preheat oven to 375°, melt butter in a 9x13-baking dish.

In a medium bowl, beat the eggs with the Splenda, cinnamon, vanilla, salt and coconut flour until smooth. Add the half and half and mix well. Pour the mixture into the prepared baking dish.

Bake on center rack in the preheated oven for 25 to 30 minutes, until just golden brown.
