1/2 cupCottage Cheese
1 tbspLemon Juice
1/4 cupRicotta Cheese
1/4 cupParmesan Cheese
1 tbspMayonnaise

Mix ingredients in skillet and cook on medium heat, just until warm/hot.

Pour half into bowl and chow down! Throw the rest in the fridge as leftovers. Can easily be microwaved in under a minute and makes a quick lunch for the next day.
