1/4 cuponion, chopped
1 tspginger grated
1/4 tspcayenne pepper
3 cupmango chopped
1jalapeño chopped (optional)

Add all to pot and bring to a boil. Reduce heat and simmer uncovered for 15-20 min.

For variation add curry and or cinnamon. To taste.
