Salted egg fried rice

Ingredients

  1. 1 1/2 cuprice
  2. 1salted egg
  3. 2dried scallop
  4. 1 cupfrozen vegetables
  5. 1sesame oil
  6. 2 tbspsoy sauce
  7. 1 cupluncheon meat
  8. 1/2 cuponion, chopped
  9. 1 pinchsalt
  10. 1 pinchpepper

Cooking Instructions

    Cook rice and refrigerate overnight to draw moisture from rice

  2. 2

    Soak dried scallops in water. After at least 3 hours, pull apart to strips. Set aside water used to soak dried scallops

    Cook frozen vegetables separately and set aside

  4. 4

    Add oil to medium hot pan

  5. 5

    Add onions and stir fry, for around 1 minute

  6. 6

    Add in luncheon meat, dried scallops and vegetables, stir fry for around 2 to 3 minutes

  7. 7

    Add in rice and toss

  8. 8

    Add salt, pepper and soy sauce

  9. 9

    Create well and add in salted eggs

  10. 10

    Cook eggs for around 2-3 minutes

  11. 11

    Add sesame oil to taste
