Rinse rice for 3-5min, no need for perfectly clear water. Place rice in strainer and drain for 1h in the winter, 30min in the summer.

Combine vinegar, sugar, salt and mirin in bowl and mix. Cook rice for 15min, let it rest for 10min. Place it in a glass dish and lightly fan it while adding the vinegar mixture. Mix the rice gently.
