Ingredients

  • 1 lbPork cutlets
  • 1 pinchPinch of salt
  • 1/4 cupAll purpose flour
  • 3 tbspOlive oil
  • 1/2 cupApricot jam
  • 1 cupLow sodium chicken broth
  • 2 tbspDijon mustard
  • 1 tbspUnsalted butter

Steps

  1. 1

    Sprinkle pork with salt & dredge in flour. Heat oil over medium heat & brown meat in both sides. About 3 - 5 minutes.

  2. 2

    Transfer meat to plate ; keep warm.

  3. 3

    Add jam, broth , mustard to the pan. Bring to summer & cook until thickens (about 3 minutes ). Pour sauce over pork & serve alone or over rice or pasta.

  4. 4

    You can use chicken or turkey instead if pork
