Ingredients

  1. 2Eggs, beaten
  2. 2 lbGround Beef
  3. 1 cupBread crumbs, I use italian style
  4. 1 smallRed Onion, chopped finely
  5. 1 tbspParsley
  6. 2 cloveGarlic
  7. 2/3 cupKetchup
  8. 2 tspWorcestershire Sauce
  9. 1Salt and Pepper

    Preheat oven to 350°F. Spray 18 regular-sized muffin cups with cooking spray or line them with tin foil cupcake cups.

    In a large bowl, mix all meatloaf ingredients until well combined. Divide mixture evenly among muffin cups, pressing mixture down firmly.

    Bake 35 to 40 min. or until meat thermometer incerted in center of loaves reads 160°F. Cool slightly in muffin cups.

    Optional: Decorate with mashed potatoes on top.
